Hey everyone, happy hump day! I can’t believe it’s Wednesday again. I’ve been home two weeks already! It’s also time for another What I Ate Wednesday, hosted by Jenn from Peas and Crayons!
I had a pretty laid back day, and the only place I went to was the dentist’s office. I am cavity free! Hooray
My dental hygenist has been seeing me since I was a little kid, and today was my last appointment with her because she will be retiring soon. I guess it’s time I see a dentist who treats adults!
Before I left, I made my usual bowl of oatmeal (cooked with almond coconut milk, and topped with flaxseed peanut butter and frozen blueberries). I thought outside the bowl this morning and added a sliced nectarine
After my dentist appointment I applied for another job (I believe this is number 6) and my stomach began to rumble, so I fixed up some lunch. Recording my all eats is making me realize how boring my breakfast and lunch are, since I made the same salad I always do.
Spring mix lettuce with chick peas, tomatoes, avocados, feta cheese, and Newman’s Own Lite Italian dressing.
I also had a mug of corn and lemongrass soup. The flavors really mesh well together!
I also some of the iced blueberry green tea I made the other day.
I spent the rest of the afternoon baking and working out. By 5:30 I was starving so I cooked up some scrambled eggs with tomatoes and leftover kale and cauliflower. On the side, I had some multigrain bread spread with a wedge of laughing cow cheese.
After dinner, I was still pretty hungry so I made a mango-melon smoothie. It definitely hit the spot!
In the smoothie:
- Chobani mango yogurt
- 1/4 small cantaloupe
- 1 tbsp flaxseed
- 1/3 cup frozen raspberries
- splash of Almond Breeze almond coconut milk
And finally, for the pièce de résistance, berry banana bread!
I made this delicious slice of heaven by altering a recipe I found online. It’s vegan, oil free, and I’ll be sharing the recipe tomorrow!
